Extreme Makeover - Me Edition - Week 6

Amber started this weekly post so hope on over to her blog aefilkins and find out how you can join in on the fun.

So it's Wednesday again...and that means it's time to report with my progress...I'm depressed this week...not because I've totally given up but because I can't seem to find the motivation to exercise as much as I should be. I feel good when I exercise on a regular basis, so why am I lacking so much in motivation...is it really that hard to set out a few nights a week to feel better??? The simple answer, no...but I keep putting it off.

I got on my elliptical only once in the past week. That's better than the zero times in the weeks previous...but I know it's still not enough. I have kept up with doing stairs on a pretty consistent basis and walking outdoors at least an hour a day...so I really shouldn't beat myself up too much.

Eating better has been so much easier than I thought it would be...I haven't had a McDonald's burger in at least 3 weeks...no fast food at all actually...I've made an effort to have more fruits and veggies in the house and the fear that they would just sit there and go rotten has totally left...because we've all been eating healthier. I packed the boyfriend a salad for lunch yesterday and he didn't complain lol. He actually told me he really enjoyed it.

My biggest hurdle lately seems to be getting back on the elliptical and drinking more water! I bought some crystal light yesterday in hopes it will get me drinking less pop.

My goals for the this week:

get on the elliptical at least 3x (starting tonight!)
drink more water
continue on my path of eating healthy

Amber asked us to share a healthy recipe this week.

I thought long and hard about this one...because although I make alot of balanced, healthy meals...they are nothing out of the ordinary.

So I figured I'd share my healthy (or at least healthier) recipe for hamburger helper. We haven't bought a box of that stuff in years because I make this instead.

1 lb ground beef
1 can tomatoe soup
1 can cheddar cheese soup
cayenne pepper (optional)
1/2 a package of egg noodles (can use whole wheat pasta or pasta of any kind)

It's really so simple to make...

Brown the ground beef, drain out the fat, add the soups (no milk or water just the cans of soup)
Let the sauce simmer on low to medium heat for about 10 to 15 minutes. At this point I add my cayenne to add some spice to it...my boy likes spice...but most children do not so you may want to take out their portions before adding the 'kick' to it. I've often put too much spice so I'd say to start with about a tablespoon and go from there.

While I'm making the sauce I cook my pasta.

Dinner in less than 25 minutes! Enjoy!

You had a great week Mel! You did a lot. Just b/c you didn't use the elliptical as much as you had hoped you would, you were still moving and THAT'S what counts! AND you gave up eating fast food. That's major!

Mel, don't worry about the excercise...today is a new day!! Set a time of day/certain days only...morning, noon or night and tell your boyfriend, a girlfriend even your son {who would probably love to tell you to do something} and ask them to remind you that it's time to excercise. Remind them that you might be tired and you may get angry but that you want them to "help" you, not scold you. If you're willing ;)

I make my family hold me responsible for when I want a brownie or ice cream..."Mom, you told us you didn't want to eat those this week".

Just a thought.

Thanks for the recipe...maybe even my picky eaters would eat this :)

It took me FOREVER to get motivated for exercise! I'd do it a couple times here and there, but was very hit an miss.

This last week something just clicked and I finally got down to it! I know you can do it!

My kids love spice, so this will be a good one for me to try...thanks for sharing!

Don't get stuck on not doing any formal exercise. Just do your best. I find if I am beating myself up over exercise it can lead to worse activities. Keep up with the water drinking.

Mel, walking an hour IS exercise! That's terrific! about the pop, you'll find (I did) that if you can cut it out, it will taste SO sweet to you when you go back! I used to drink regular coke 1 can a day at lunch and when I cut that one thing out I lost about 5 lbs over time. Hang in there, you're doing great!

Oy, the ability to not eat fast food is hurting me. It's hard. The kids I nanny for get fast food once a week and I smell it and I just want it.

Oh, and I got this great water bottle from walmart recently that's totally helped my water intake. It's got a straw and a sports grip and a little handle. It's awesome. i take it everywhere and since it's always there I drink more. Oh yeah, and it fits in my cup holder in my car. It's really bright blue.

You're doing great! The stairs alone would be a fabulous workout! I know how you feel, I've had a rough time getting and staying motivated in the exercise department, but CONGRATS on the healthier eating, that's wonderful!!!

Sounds like you are doing GREAT on the eating front!!! I am lacking motivation as well.... I have got to get my a$$ in gear! I know you can do it!

Props to you on giving up fast food!! THAT in itself is major, I think. We eat out a lot, during the weekends mostly.

I think you are doing great Mel! I felt really down last week because I felt like I wasn't seeing any results. But I figure every little thing I do is an improvement.

Your hamburger helper dish sound yummy. I think my family would really like it!

Good for you on eating healthier! That's my goal right now too. And I completely understand the exercise frustration. I have weeks where I work out every single day and then I have weeks where I have to force myself to work out once! What's the deal with that? You're doing good!
